Straightforward, well-balanced Japanese kitchen knives made for everyday use. The blades are forged from white paper shirogami carbon steel, wrapped in softer jigane steel, with octagonal wooden handles that sit comfortably in the hand. Light, sharp, and precise.

White paper steel is valued for how easily it sharpens and the fine edge it holds. It’s a practical choice for regular home cooks as well as professionals — responsive, unfussy, and rewarding to look after.

These are fully carbon steel blades. They will patina with use and can rust if neglected. Wash immediately after use, dry thoroughly, and wipe lightly with camellia oil if not used daily.

These knives are produced by Niwaki, made at the Tadafusa Factory in Sanjo, Japan. Founded in 1948 and now run by the third generation of the Sone family, the factory is known for practical tools made to be used daily.
